Oolong teas are partially fermented(oxidized) teas that share characteristics of both green teas and black teas. After semi-fermentation, the tea leaves are pan-fired to stop oxidation, and then the leaves are hand-rolled and dried. Much of the world's oolong tea is produced in southeast China and Taiwan, and it is also most used in the Chinese ritual of Gongfu-cha. It is said that Oolong tea fights aging of the skin, and also that it acts as an emulsifier for fat and cholesterol in the body.
