The number "120" refers to the number of bristles on the bamboo whisk. The whisk is made by splicing one single piece of bamboo into 120 bristles. This is by far the most effective(really the only) item with which to whisk matcha. Use of any other utensil will result in clumps. Matcha will be more evenly dissolved when prepared with a 120-bristle whisk as opposed to an 80-bristle whisk. An absolute must-have for preparing matcha.
